06B - 5B - 22E. (cont'd) - Packages of pre-cooked beef hot dogs are vacuum packaged from bulk at the establishment. Firm lacks dept authorization to vacuum package the product. Owner states that the product was not received vac packed and firm does not maintain written certification or a lab analysis to ensure parameters for C. Bot control in the products being vacuum packaged. Master box and ingredient list are not available. Internal temperature of beef dogs is 44°F. 4.25 pounds of product destroyed under signed waiver during the inspection. The accuracy of the thermometer used was verified this day. 06B. - Observed two 0.25 lb. vacuum sealed packages of smoked salmon being offered for retail sale in the display cooler. Products have an internal temperature of 46°F and have been in the cooler for an unknown length of time. Manufacturer label states to keep the product at or below 38°F. 0.5 pounds destroyed under signed waiver during the inspection.
