05B - 18B. Thermal processing for General Tso's sauce did not reach the critical temperature of 180*F for the product fill temperature as required by the scheduled process. Fill temperature was observed to be at 179*F during the inspection. Product re-worked to reach the critical fill temperature of 180*F during inspection. - 18C. Production is not done under operating supervision of qualified individual with Better Process Controls training. - 18D. Proper and complete inversion techniques before cooling of General Tso's sauce in glass bottles are not executed by personnel as required by the scheduled process. Product re-worked during inspection to insure proper and complete inversion of product bottles. - 18J. Inversion time for post hot fill records for General Tso's sauce are not maintained.
